Shiitake Mushrooms

Shiitake mushrooms are native to east Asia but are now found worldwide. You can grow these mushrooms anywhere in just about any type of climate. They are one of the easiest mushrooms to cultivate and can grow from hardwood logs. The shiitake is a stemmed mushroom, the cap is centered on the stem with attached cream-colored gills. Cap color can range from honey brown to dark chocolate depending on the weather. It can sometimes be covered with whitish fibrils or tufts in arranged zones.

Shiitake are usually described as having an earthy, smoky flavor and a dense meaty texture. When added to any recipe it brings a punch of umami that intensifies when cooked.

Shiitake mushrooms are one of the most protein-rich cultivated mushrooms. These mushrooms also contain almost all the essential amino acids. Studies have indicated that Shiitakes can help boost immune system function, regulate blood pressure and sugar levels, lower cholesterol, and provide cardiovascular and digestive support. They also contain antiviral and antibacterial properties as well as anti-inflammatory compounds.
